This one is light and fresh, a perfect dish for spring. I doubled the veggies for more added volume for leftovers of the orzo. Pairs well with seared prawns, too. I didn’t have any issues reheating this dish. I saved a thicker cut for the leftovers, which came out not overcooked when reheated.
